MASTER FERMENTER ACADEMY
Everything you need to master fermented beverages — fermentation science, distillation, koji, drink design, and fermented cocktails. One program, lifetime access.
“Enrolling in the program at Master Fermenter was one of the best decisions I've made for my career. Federico's knowledge and teaching style made complex techniques easy to understand, and I was able to create incredible craft sodas and fermented drinks with confidence. These new creations helped position Caffè dei Artisti as a true destination for artisanal beverages.”
“As the chef and owner of ITALDO, an award-winning bakery in Tulum, I've expanded my offerings to include craft kombuchas and probiotic-rich beverages, which have been a hit with my guests. The Academy's well-structured lessons gave me the technical knowledge I needed to confidently experiment.”
“"As a Master Brewer, I joined the academy to deepen my knowledge of spontaneous fermentation and learn cutting-edge techniques from around the world. I've discovered that imagination is the only limit when creating new recipes. Right now, I'm developing a version of chicha produced with industrial processes for commercial sale, blending heritage with innovation.”
“What really impressed me is the incredible range of flavors you can achieve when you understand how to create balance between them. Thanks to the academy, I've expanded my creative horizons and developed the tools to think outside the box when designing recipes and fermentation methods.”
“Master Fermenter Academy gave me exactly what I was looking for to expand my knowledge and bring something truly special to my restaurant in Mexico City. Now I'm offering my customers unique, house-made beverages that elevate their dining experience, and they love it!”
“Federico's clear and passionate teaching style made every lesson easy to follow. At Model Mix, we've started incorporating advanced fermentation techniques into our creations — every cocktail has become a more refined, multi-sensory experience.”
You may be a bartender developing a new menu, a chef exploring fermentation, a brewer refining your technique, or an entrepreneur building a beverage brand.
Whatever brought you here, the problem is often the same: fermentation information is fragmented, recipes rarely explain the science behind the process, and most courses cover only one small part of the beverage world.
Master Fermenter Academy brings the complete process together — from fermentation fundamentals and technical control to drink design, distillation, production and professional beverage development.
The Academy Is Designed For:
pH, density, yeast management, troubleshooting, isobaric bottling — the technical foundation that separates people who follow recipes from people who create them.
Sodas, kombuchas, fruit wines, meads, ciders, sparkling wines, seltzers, distillates, fermented cocktails. Not theory — recipes you'll produce, taste, and refine.
Whether it's a signature menu, a product line, or a full beverage brand — you'll have the technique, the creative process, and the production knowledge to make it real.
Built over three years of teaching, experimentation and professional beverage development, the Academy brings fermentation, distillation, koji, drink design and advanced production together in one complete program.
